Epicure recently added some new items to our catalog of products.  You can expect the same level of quality in the ingredients, ease of preparation, and delicious taste.  I was really excited to try this citrus lime no-bake cheesecake mix because I love cheesecake!  This has easily become one of my favorite items from Epicure. It’s simple and easy to make and the results are fantastic. It only needs a couple of ingredients that you may already have in your refrigerator and pantry.  I never have pie crusts on hand so, I had to make a trip to the store.  I went to Aldi and they had everything I needed.

You will need a stand mixer or a hand mixer to make the cheesecake.  I used my Kitchen Aid stand mixer.  

Ingredients Ready to Go
Ingredients:

8 oz. cream cheese, softened at room temperature
Juice and Zest of 1 Lime
1 ½ cups of heavy whipping cream
1 9” prepared graham cracker crust or a prebaked pie shell

Directions:
Using a stand mixer or hand mixer, beat 1 softened block of cream cheese with the mix on medium-high until smooth.  

Mix added to Cream Cheese
Scrape the bowl; beat in juice (and zest, if desired) from one lime.

Gradually add 1 ½ cups whipping cream, whipping until soft peaks are formed.  


Soft Peaks Formed
Fill the graham cracker pie shell and smooth the top.


Mixture Added to Pie Shell
Freeze for at least 2 hours until set.  Refrigerate until ready to serve.

Recipe Notes:

  • Soften cream cheese on the counter for an hour before using.
  • Use cold heavy whipping cream.
  • I used a graham cracker crust, you can use whatever you prefer.  My sister doesn’t like the graham cracker crust so the Shortbread crust would be better for her.
  • I made whipped cream with the leftover whipping cream and decorated the top using a pastry bag.  You can top it with any whipped topping you prefer.
  • This can be made dairy-free.
  • You can make 36 mini tarts by filling prebaked and cooled mini tart shells with the filling using a pastry bag. 
  • You could also substitute lemon for the lime for a different taste.

Taste Test

The cheesecake has a velvety texture and I think it tastes delicious.  It’s cool and refreshing and has a tangy citrus flavor.  I made it to take to my sister’s house for a small gathering and it was very well received.  It’s a great summertime dessert or if you’re like me and love cheesecake, it’s a great anytime dessert.   One serving has 9 grams of sugar and 270 calories.  A serving is 1/12 of the pie, so watch out for that.
