Epicure’s new summer products have just been launched and I was very excited to try a couple of things. First up was the Cheddar & jalapeno Cornbread. It’s a traditionally savory and mildly sweet cornbread with just a touch of heat from the jalapeno. Don’t worry, it’s still kid-friendly. It can be made in the oven or microwave if you have Epicure’s Round Steamer. I made mine in the oven in an 8” round cake pan.
Ingredients: ¾ cup milk ¼ cup unsalted butter 2 eggs ½ cup grated cheddar cheese
Directions: Melt the butter and heat the milk. This can be done by microwaving the milk and butter on high for one minute or you can gently heat the milk and butter on the stovetop. I used the stovetop method.
Whisk in eggs until foamy. Make sure your milk and butter mixture is not too hot. We don’t want scrambled eggs. Add the cornbread mix. Whisk vigorously until no lumps remain. Stir in cheddar cheese.
Microwave: Add mixture to your Round Steamer and cover with the lid. Cook on high for 9 minutes*. Let cornbread rest for 5 minutes and invert onto a wire rack to cool. Oven: Pour mixture into a well-oiled round cake pan. Bake on a sheet pan in a pre-heated 350℉ oven for 35-40 minutes. Rest for 5 minutes and invert onto a wire rack to cool.
*Cooking times may vary based on microwave wattage.

Recipe Ideas:
- Make GF croutons with leftover cornbread. Cut into cubes and lightly spray with oil.
- Roast on a sheet pan in a 375 ℉ oven until toasty.
- Cover with chili and top with sour cream.
Taste Test
We ate the cornbread with our dinner and topped it with butter. It is delicious and has a mild heat to it. The combination of cheddar cheese and jalapenos is delightful. You could switch out the cheese if you would like to. I think it would be good with pepper jack cheese if you want it a little spicier. I loved it! We had leftovers and I warmed a piece for breakfast the next morning. I found it to be delicious all on its own. Randy liked it also and thought it went well with dinner. He said he wasn’t sure it would fit with the meal I had cooked but, he was pleased.
