Baked potatoes have become one of our go-to weeknight meals.  We usually make them meat-free and serve them with broccoli and cheese.  Feel free to add chicken, chili, pulled pork, or any protein you have leftover in the refrigerator.   

To make cooking and cleanup super easy, I use my air fryer.  I have the Power XL Air Fryer Oven.  

I start with large russet baking potatoes.  Clean them really well and trim off any bad spots.   Pat dry to remove the excess water.  If you don’t remove the water, the skin will not crisp up so take the extra time to make sure you get them dry.

Put on a plate or a piece of waxed paper so you won’t get your counter messy.  Cover the entire potato with olive oil.  Liberally add salt and pepper to each side.  Make sure to add a generous amount.  This helps to make your crispy peeling flavorful.

Place your seasoned potatoes in your air fryer on the middle rack or in the basket.   Set the air fryer to 400 degrees and cook for 50-60 minutes depending on how large your potatoes are.  Check them at 50 minutes to see if they need a little longer.

While your potatoes are cooking, go ahead and prepare your toppings.

Recipe

Large russet potatoes
Olive Oil
Salt
Pepper

Wash potatoes and pat dry
Cover with olive oil
Add salt and pepper to the outside
Place in the air fryer
Cook until potatoes reach desired tenderness (at least 50 minutes for larger potatoes, cook time will depend on the size of your air fryer)
